This tart in particular with the caramelized onions and the goat cheese give the perfect balance of sweet and savory. Despite this being a tart and perhaps being thought of as difficult, it still falls under the category of easy meals. The only real prep for this recipe is the crust, and the caramelised onions. If that is the hardest part, then this onion tart with creamy goat cheese should be on your dinner menu in no time.

For this recipe it is important to only use sweet onions. A sweet onion is going to give you the right sweetness when you cook them down. You want a simple caramelized onion, and red onions will not give you this.
I use a soft goats cheese. I have not used feta cheese in this recipe. You could try it if you want to but I cannot guarantee that if you do not use a similar goat cheese that the taste will not be effected. Tangy goat cheese shines in this recipe and you would lose some of that if you used a hard feta for example.
I use my gluten free tart crust for this recipe. However if you are not gluten free then you can use whatever crust you wish. I would stick to a regular pie dough crust however rather than a puff pastry dough (this would work better if you were doing bite sized and individual pieces where you would cut the sheet of puff pastry.) Either way, be sure to use a buttery pastry crust as it brings the recipe together and is our pastry case.

Goat cheese: I use soft goats cheese. I think it adds the best flavor and I like the texture.
Half & Half: You could use cream if you wanted to but this is a rich tart by its nature. Cream would amplify that.
Onions: A key part of our tart
Pie Crust: I use my gluten free tart crust for this recipe which is made from cup4cup flour (gluten free), butter, egg, and cold water
Cayenne Pepper: I like to add a pinch of cayenne to give some further depth of flavor to the tart
Thyme: I love fresh thyme in this, and in general. It adds such a gorgeous flavor.
Eggs: Eggs help bind the filling together when it bakes in the oven
Salt & Pepper: To season the filling
📖 How to make this caramelised onion and goats cheese tart
First thing to do is set the oven to 375°F
Make the tart crust: If you are making my crust, in the bowl of a food processor place the butter, egg, flour, and water. Pulse until it comes together to form the dough.
Put the dough into the tart pan: I like to use a tart tin with a removable bottom but you don’t have to, just makes it easier for when you want to slice it. You can either roll out the dough between two pieces of parchment paper and lay it over the tarty tin and mold it in. Or, dump the dough into the tin and press it to fit with your fingers.
Par bake the crust: Cover it with parchment paper and place pie weights over the crust. Bake for 15 minutes. Remove from the oven and set aside.
Make the filling: In a large frying pan, place the butter and cook down the onions. Caramelized onions are a deep golden brown when done. While the onions are cooking down, place in half & half into a medium sized bowl. Add the eggs, cayenne, and thyme leaves. Whisk together.
Put it together: Place the tart in on a baking tray. Line the bottom of the tart with the onions and crumble up the cheese. Scatter it around. Pour the mixture in. Place in the oven and bake for 30 minutes. You want the filling to be firm and the tart to be golden brown.
Let it sit: For 5 minutes and then serve immediately. Top with more thyme if desired.
🍽 How to store this Caramelised onion and goats cheese tart?
If you are storing it in the tart pan then simply cover it with tin foil. If not, store in an airtight container. When you want to reheat it, heat the oven to 350°F and bake for 10-15 minutes on a lined baking sheet.

This would go really nicely with a sparkling cider or white wine if you are looking for a drink to match it with.
