I love carrots! It’s been a tough call recently between my harissa carrots and my brown sugar honey glazed carrots. At the holidays we also make a carrot sauce that my grandmother used to make. Carrots are a regular and delicious side dish to many of my meals. Miso is often known for being associated with miso soup (which is delicious), but, it goes beautifully with so many things. Miso roasted carrots are few in their ingredients, but delicious in their flavor. Miso is traditionally thought to be better for savory flavors, however, as carrots are sweet, you’d be surprised how well they go together! I actually have an entire miso category on my site where I mostly use the paste in desserts! Let’s make this tasty side dish.
❓ WHAT IS MISO?
Miso paste is a fermented soybean paste that’s commonly used in Japanese cuisine. It’s made by fermenting cooked soybeans with salt and koji (a type of fungus), which gives it its characteristic umami flavor. There are a few different types of miso paste, including:
- White miso: mild, sweet, and light in color, often made with rice and soybeans.
- Red miso: bold, full-bodied, and pungent, often made with more fermented soybeans.
- Yellow miso: medium-bodied, nutty, and slightly sweet, often made with rice, soybeans, and barley.
- Barley miso: nutty and robust, often made with barley and soybeans.
Miso paste can add a ton of flavor to soups, sauces, marinades, and dressings!
📜Tips for recipe success and alterations:
I brown the butter for this recipe because it adds a delicious nutty flavor. If you do not wish to spend the extra few minutes browning it, then you can just melt the butter.
You can use whole carrots (or cut them up) and you can use rainbow carrots if you wish.
I use white miso paste in this recipe. I have not tried other types of miso paste (such as red miso paste) as it pairs nicely with sweet dishes. It therefore pairs beautifully with the natural sweetness of the carrots. You can use organic carrots or not, it is up to you what kind of carrot you use!
If you wanted to add some sweetness to the glaze you could make a miso honey glaze by adding a few tablespoons of honey to the recipe or maple syrup.
If you wanted to add a little bit of heat you could add some red pepper flakes.
I like to top mine with sesame seeds! I do not use sesame oil because it will compete with the flavor of the miso but the seeds are a nice taste and textural difference.

Carrots: See above on the different types of carrots you can use but I use regular carrots
Miso Paste: This is going to add the umami flavor to the dish
Butter: Miso butter is a thing and in this dish we sort of have a miso butter by the fact that we have melted butter and miso together. However it is not a compound butter.
Salt and Pepper: To season our carrots
Sesame Seeds: I like to top my carrots with sesame seeds to give them a pop of flavor and texture

There is no boiling in this process! Simply set your oven to 425°F
Begin by making your glaze: first you will brown your butter. Browned butter should be a golden brown with little flecks in it. Once the butter is ready, add the white miso paste to the pan and mix together. Set aside.
Peel the carrots: and place them on a rimmed baking sheet (you could also use a baking dish ). Pour the miso sauce over the carrots and make sure that the carrots are covered in it. Once they are, season with salt and pepper.
Roast the carrots: the roasting process is simple. Place the carrots into the oven and bake for 15 minutes. At the 15 minute mark, open the oven, and turn the carrots over. Place the baking tray back into the oven and bake again for another 15 minutes.
