I love fish recipes because they usually are a quick dinner. I always have cod fillets in my freezer. Lately, my favorites have been my mediterranean cod recipe (because I am just digging Mediterranean cuisine) or my cod au gratin but this one is a favorite because it is a meal I can make for the whole family in no time and is super delicious. This is a delicious meal and a great option for dinner that I love to serve with my harissa carrots or my polish potatoes. Best part? The flakiness of the cod. Let’s make this recipe.

You do not need to use “fresh cod” from the grocery store. It is important to remember that all fish when caught is then frozen. “Fresh” fish at your local grocery store is fish that has been frozen and already thawed. I love keeping frozen fish fillets in my freezer instead. That way, I can control when I want to make them. I simply put the fillets in the fridge the night before to let them thaw or place them on the counter that morning until they are completely thawed.
I love using cod for this because it is a meaty fish and a blank slate. If you cannot find cod fish however you could use flounder.

Cod is a mild white fish so it does not have a distinctive fishy flavor that some people do not like. 📃Ingredients for crusted cod:
Mayonnaise: I use a light mayo but you can use regular if you wish. It serves as our “binding” agent in this recipe so that our crust will stick to the fish.
Pistachios: I do not use panko crumbs in my recipe. While a crunchy panko is delicious, the pistachios give a great flavor, texture, and are so pretty.
Cod Filets: This is my fish of choice for this recipe because it is a meatier white fish.
Salt and Pepper: to flavor the fish
📖 How do I make this crusted cod?
Set the oven to 425° degrees F
Take paper towels: and pat down the fish. You do not want the fish to have too much water in it. Otherwise, it will seep out when you back it and it ruins the crunch of the crust.
Line a baking sheet pan: with parchment paper. Place the fish fillets on the pan. Season each fillet with salt and pepper.
Place the mayo: on top of the fish. I like to use a pastry brush to coat the fish with the mayo and make sure it is covered on all sides.
Make the pistachio fine: I like to use a mortar and pestle to grind down the nuts. If you put them in a food processor, you run the risk of them turning into a nut butter which is not something you want for this recipe. Once you have ground them down into a chunky but finer powder, coat the fish with it.
Place the fish: into a hot oven and bake for 15 minutes. Remove from the oven and check to see that the internal temperature is 145°F. Once it hits 145, it is cooked and ready to serve.
Note: The recipe is fine as is but if you wanted to serve it with some chopped fresh parsley or some lemon zest you could. But a great way to serve it is as is!
