
I love Linzer cookies. Why do I love Linzer cookies? Well, let me tell you. 1) because there is jam in them and I love jam. Jam is essentially my jam. 2) I love these cookies because they are my basic sugar cookies which are gluten free and egg free. I have written about them here.
What will you need for your Linzer Cookies?
Well, thankfully, not a lot!
1. 2 sticks of unsalted butter (at room temperature)
2. 1/4 cup white sugar
3. 1/4 cup light brown sugar
4. 1 tsp lemon juice
5. tsp almond extract
6. 2 & 1/2 cups gluten free flour mix (with a thickening agent such as xanthan gum in it)
7. Icing sugar (to coat the cookies)
8. Jam for the interior – I suggest strawberry
How do you make these cookies?
- Cream together your butter and sugars for about 3-5 minutes. It will become light and fluffy (you will be tempted to eat it, but don’t).
- Add your flour, lemon juice and almond extract. It should come together to form a dough. If it is still a bit too dry, you can add 1 tsp of water or milk at a time until it does.
- Take two pieces of parchment paper and place your dough between them. Roll out your dough until it is around 1/4 inch thick.
- Bake the cookies in the fridge for at least one hour.
- Set the oven to 350°F and bake your cookies for 12-14 minutes after they have properly chilled.
- Let the cookies sit on the cookie sheet for 10 minutes after the have finished cooking. Let them cool completely.
- Take the tops of your cookies and sprinkle them with icing sugar (powdered sugar).
- Take your bases and fill with a bit of jam- not too much as it will spread when you place the tops on.



Why should you make these cookies?
Linzer cookies I feel are traditionally a holiday cookie. They are beautiful and have red and white which tend to be a reminder of holidays. However, they are delicious any time of the year. Another great thing about this recipe? It is a 1:1, so, you can make these gluten free or not, and as eggs are running low for some right now, this is the perfect recipe for all.
* If you happen to be in Canada, use the Kraft strawberry jam. 100 % the best jam ever.
