Roasted Miso Carrots Recipe with Brown Butter Glaze

Equipment

  • 1 Baking Sheet
  • 1 Frying pan

Ingredients

  • 6 tablespoon Unsalted Butter
  • 2 tablespoon White Miso Paste
  • 12 Carrots
  • ½ teaspoon Salt
  • ½ teaspoon Pepper

Instructions

  • Set your oven to 425°F
  • Begin by making your glaze: first you will brown your butter. Browned butter should be a golden brown with little flecks in it. Once the butter is ready, add the white miso paste to the pan and mix together. Set aside.
  • Peel the carrots: and place them on a rimmed baking sheet (you could also use a baking dish ). Pour the miso sauce over the carrots and make sure that the carrots are covered in it. Once they are, season with salt and pepper.
  • Roast the carrots: the roasting process is simple. Place the carrots into the oven and bake for 15 minutes. At the 15 minute mark, open the oven, and turn the carrots over. Place the baking tray back into the oven and bake again for another 15 minutes. 

Notes

I use white miso paste in this recipe but you could try yellow or red.
