- 3 eggs
- ⅔ cup cocoa powder
- ½ cup olive oil
- ½ teaspoon baking powder
- ¾ teaspoon salt
- 1 cup gluten free flour or regular flour- it is a 1:1 recipe
- 1 cup chocolate chips - I used dark but it is your choice
- Marshmallow
- Graham Cracker
- 1 ¾ cup sugar
Preheat your oven to 350°F. While it is heating up, add all of your dry ingredients into a bowl, along with the chocolate chips and whisk together. Add the oil and the eggs and whisk again. It is going to be quite thick and gooey (a great sign for a quality brownie).
Grease and line an 8x8 tin or a 9x 11 tin (depends on how thick you want the brownies) and line the pan with parchment paper. Pour the batter into the pan and smooth out with an offset spatula. Bake for 25 mins. At 25 mins, remove them from the oven and use a toothpick inserted in the middle to check if they are done. If the toothpick comes out clean then you are good to go! If not, stick back in for 5 more minutes and check again.
Once the brownies have completely cooled (let them cool in the pan), remove and slice them. Place the marshmallows in a microwaveable safe bowl and microwave for 30 second increments at a time. Stir and when it looks and is melted enough to work with, place in a piping bag or just smear them all over the brownies. You now have the option to use a lighter or a blowtorch and toast them or you can leave them as is. Top them with crushed graham crackers and eat up!
